Cheesy Biscuits

Ingredients

  • softened unsalted butter – 150g
  • extra mature cheddar cheese, grated – 180g
  • parmesan cheese, finely grated – 75g
  • plain flour – 180g
  • dijon mustard – 1 tbsp

Method

  1. Preheat oven to 170degC
  2. In a large bowl combine the softened butter with the grated cheeses and mustard.
  3. Sieve the flour into the bowl and combine everything by hand into a firm dough.
  4. Leave to stand for 10-15 minutes – this allows the fats to go into the flour
  5. At this stage you have 2 options …. (i) roll out to a thickness of 6-7mm on a floured surface and use a cutter to form the biscuits OR (ii) form the complete dough into a long tube about 50mm diameter* and they put into the fridge for an hour before slicing into 6-7mm rounds
  6. Place the rounds onto a floured baking tray or silicone sheet
  7. Bake in the oven for 9-11 minutes or until golden but not too crispy.
  • or 45mm square if you prefer square biscuits

Super simples! Makes 45-50 biscuits…..
